Care for a little West African cuisine? Well, today I’d like to finally share with you one of the most popular dishes in both Mali and Senegal. I am sure this is devoured in other places in West Africa but these two countries which used to be one before the colonizers are the main ones I know. I grew up eating this meal, but I’ve always shied away from sharing it here. If you follow me on my social channels you know I love to throw it down in the kitchen and Maafé (Tigua degué in Mali) my friend is a meal I make at least twice a month.
It is one of those meals that all the kids including #babyD enjoy.
Maafé or Tigua degué is a peanut stew served with rice. It can be made with, chicken, smoked fish, or beef. Depending on which part of West Africa you live some of the condiments could be slightly different. It is super easy to make and can be easily stored in the freezer to be eaten in later weeks.
Maafé West African Peanut Butter Sauce With Rice Recipe
- 1 kg beef, cut in cubes
- 1 large onion
- 5 garlic cloves, finely chopped
- 4 tbsp of peanut butter
- 1 large tomato,
- 1 litre of water
- 3 carrots, peeled and cut
- 1/4 of green cabbage cut in two
- 1tbsp smoked paprika
- 1 can of tomato paste
- 2 Jamaican pepper
- 1 bayleaf
- 1 pinch dried or smoked shrimp ( optional)
- 1 organic cube Maggie (optional)
- 1 cup of Okra (optional)
