It’s precisely 12:09 AM, and I am sitting here writing this post because I promised many of you I would make a long-form blog with the recipe of this yummy roasted purple carrot hummus. Although the blog is where it all started, it’s getting harder and harder to find time to sit and write. I will not make empty promises, so I won’t even act like there would be a new post tomorrow. With that being said, how are you guys doing?

We are going through our 3rd lockdown since the beginning of the pandemic. it’s been a hard few months but I am grateful that both my family and I are doing ok.

This is what my productive day looks like these days; take a quick break from a photoshoot to make one of the fam’s favorite snacks because my boys are at that age where they are always hungry. I don’t know if you ever tried any kind of hummus in the past but if you have not you are totally missing out. I first tried this Middle Eastern dip at a Lebanese restaurant years ago and never stopped eating it. I eventually learned how to make hummus from scratch like a pro. Ok, maybe not, but you be the judge after you try the below recipe.

Easy Homemade Purple Roasted Carrot Hummus

I promise you this homemade roasted purple Carrot hummus is a hundred times better than any store-bought. It’s simple to make and the best part about hummus is that you can make different flavors. I have a friend that only swore by the original version and nothing else.

We usually pair it with chips, pita bread, veggies, toast, chicken kebab, lamb chops, as spread in sandwiches, the options are endless.

RECIPE

1 can Chickpeas

3 Purple Carrots

1 tsp Cumin

3 cloves Garlic

1/3 cup Olive oil

Fresh Herbs ( Persil, cilantro)

2 Lemons

2 lemons zest

2/3 cup Tahini

Salt and pepper

1 tsp Cumin

1/3 or water

Mint, Pomegranate, roasted chickpeas to garnish

Toss all ingredients in the blender and simply hit the “dips and spread” program setting and watch the blender work its magic to create a perfectly smooth, bright purple hummus! Top with some mint, pomegranate and roasted chickpeas to garnish and serve.

Is there a substitute for Tahini in hummus?

I honestly would not substitute the tahini with anything because it adds so much flavor to the dip but your free to leave it out.

Can I make it in another Blender?
